I love food. I love making food. I love eating it. I love how food makes me feel. I love that food creates bonds between friends, family and strangers. It can be so celebratory.

I also love being able to listen to what my body needs, but it took me a awhile to get here.

After years of dieting I had a difficult time discerning what to eat and how to enjoy food without overdoing it and feeling guilty. I had a hard time feeling good about anything I ate.

But I’ve found the best way to eat, is to eat like you love yourself.

Let go of your judgments, give up your guilt and begin to eat for your health AND happiness. There is room for both. Plus, if you’re willing to listen to your body, I bet you’ll find they go together nicely.

Here’s a recipe I’ve re-created from a favorite little bistro that my husband and I pop into for date nights.

BEET AND GOAT CHEESE SALAD

INGREDIENTS:

Greens of choice (mix greens and arugula are great!)

1 beet (wash and slice of the ends)

1 carrot (wash and slice off the ends)

½ ounce feta goat

1 tablespoon sunflower seeds

Throw greens in a bowl. Grate beet. Peel as many carrot shreds as you like. Add feta and sunflower seeds. (Additional toppings can always be added depending on your taste-maybe some raisins if you have a sweet tooth like me!)

DRESSING INGREDIENTS:

¼ cup apple cider vinegar

¼ cup balsamic vinegar

1 ½ tablespoon miso paste

Mix with a fork until the miso paste dissolves. Keep in a glass jar with a lid, in refrigerator, for the week.

Top salad with olive oil and vinegar dressing. Enjoy!

So simple, nourishing and satiating.
