Happy Fat Tuesday!! Full disclosure here…I have no ties to the south. I simply love making comfort foods healthy and convient. This is my lazy healthy version of red beans and rice.

You can make an individual serving for a quick workday breakfast or lunch…top it with a fried egg! Or make it for a simple warming family dinner. If you feel more satiated with meat you can cook bacon, sausage or shrimp and add it to your mixture.

RED BEANS + RICE

2 tablespoons oil | olive oil, coconut oil or bacon grease

2 cloves of garlic chopped

2 handfuls of kale destemmed + chopped

1/2 cup long grain brown rice  | pre cooked in turkey or vegtable broth

1 can kidney beans | drained and rinsed

Favorite salasa + Tony’s Cajun Seasoning

Place oil, garlic and kale in pan. Saute for up to five minutes, depending on how small you chop the kale. Then add rice, beans and leave it on the heat until everything is warmed up.  Dish it up and let individuals add salsa and Tony’s Cajun Seasoning to each bowl for taste.

So simple. Hope this feels warm and saitating in your belly!
